Italian Sausage Stew

Italian Sausage Stew

Serves 4


Ingredients: 1 Can of Diced Tomatoes (15oz)
1 teaspoon Italian Seasoning
1 pound Hot Italian Sausage
16 ounces Mixed Vegetables (Onions, Peppers), Frozen
1 Mushrooms (4.5 ounce)
3 Cloves Minced Garlic
2 Zucchini (medium)
4.5 ounces Tomato Paste

If using fresh mushrooms instead of canned, saute in olive oil with a bit of extra garlic.

Cut Italian Sausage into 1 inch pieces. Brown in frying pan.

Chop zucchini into bite sized chunks.

Add all ingredients except tomato paste into slow cooker. Cook on low for 5+ hours.

30 minutes before serving, stir in tomato paste to help thicken juices.
