Brown Jambalaya

Brown Jambalaya

Serves 1


Ingredients: 1 pound Chicken Breasts
1/2 cup Celery
1 pound andouille sausage
3 cups Brown Rice
3 medium white onion
6 cups chicken broth
6 Cloves Minced Garlic
1/2 cup Green Onion
1/2 cup Green Bell Pepper
2 tablespoons Tabasco
1 tablespoon Cajun Seasoning

1/2 Cup Green Onion ~ 2 bunches
1/2 Cup Green Pepper ~ 1/2 Medium Pepper
Smoked Turkey Sausage can be substituted for Andouille.

Cut chicken and sausage (cut on bias) into bite sized pieces. In heavy pot, add cooking oil and fry chicken and sausage (add portion of garlic and cajun seasoning to spice). Remove chicken/sausage and excess oil from pot. Add onions, peppers, celery, and garlic and then saute.

Add chicken broth, chicken/sausage, and spices and simmer for 30 minutes.

Bring to rolling boil and add rice, reduce heat to simmer and cover. Simmer for 45 minutes. Turn rice after 20 minutes and 45.

Remove from heat and let stand for 10 minutes before serving.
